Loaded Cheesy Fries

Kerrymaid Original Slice isn’t just for burgers. Used as a base for an indulgent cheesy sauce with a little spice, the slices give amazing flavour and a perfect glossy texture that coats fries beautifully. Paired as it is here with salty bacon and crispy crunchy fried onions it’s already a degenerate feast, but why not bring it to new heights and lean on the Asian spice in the sauce by topping off with kimchi and toasted chopped peanuts?

Ingredients

Method

  1. Add the Kerrymaid Double and gochujang paste to a large heavy-bottomed pan and mix well.

  2. Bring to a boil and add the Kerrymaid Original Slices one by one, stirring constantly until they are dissolved.

  3. Check the seasoning and thickness and adjust as needed (too thin, add a couple more burger slices, too thick add a splash of Kerrymaid Double).

  4. Fry bacon until crispy and chop into rough chunks.

  5. Fry the chips, drain off excess oil and toss in a little salt.

  6. Place the chips in serving dish and ladle over the cheesy sauce.

  7. Top with bacon bits, sliced spring onions, crispy onions and serve.

TOP TIP FROM OUR CHEF

  • Try swapping out the Gojuchang paste for Chipotle paste for a smokier Mexican style profile. Or remove entirely for an American style Nacho cheese sauce
